Black Bean and Rice Bake

2 Cups Cooked Brown Rice
1/2 Cup salsa
1/2 Cup eggbeaters
1/2 Cup Green Peppers, finely chopped
1/2 Cup Mushrooms
1.5 oz LF cheese
1 garlic clove, minced
LF Sour Cream (optional)

Mix all together in a bowl. Put in 8x8 dish sprayed with cooking spray. Bake 20-25 minutes or until a knife inserted comes out dry. Top each serving with LF sour cream, if you want.
