Smile Chicken Florentine

I made this last night and enjoyed it. The parmesan cheese made this chicken (I even added a little bit more)!

Chicken Florentine

2 T. olive oil
1/8 t. black pepper
4 boneless, skinless chicken breasts
1 10 oz. box frozen chopped spinach, thawed
2 T. basil
1 clove garlic, chopped (a little more if you're a garlic fan like me!)
1/4 C. grated parmesan cheese

Season the chicken with the pepper. Heat oil in a skillet over medium heat. Add chicken and cook for 10-12 minutes until chicken is browned and cooked through, turning once. Turn off the heat and tent skillet with foil.

Wash spinach but don't dry. Combine spinach, basil and garlic in medium saucepan over medium heat. Cover the mixture and cook until spinach leaves are wilted, about 2 minutes. Drain any additional water. Layer a bed of spinach mixture on each plate. Place a chicken breast on top and sprinkle with parmesan cheese. Enjoy!

CJ, this looks delicious! However, looking at the instructions, it seems that you are using fresh spinach rather than frozen, as frozen is already wilted. Do you know which we should use?

I'm so sorry that I didn't see your question before now Laurie!!! I use the frozen spinach. A lot of the time I forget to thaw it out and use warm water to do that. Either way, I wash it and would usually wring it out. For this particular recipe I don't wring it out. Hope that helps!

I made this for dinner tonight... most TASTEEEEE.

I cooked the chicken then seared it in the skillet with the OO , garlic and a splash of lemon juice... Popped it in the oven with just enough part skim mozzarella and melted it... Popped the spinach into the skillet and sauteed it... -Splash of Lemon and served it up...YUM YUM!
