Italian Spinach Pie (from Kraft)

    Makes 8 servings

    1 (16oz) low fat cottage cheese
    1 (10 oz) frozen chopped spinach, thawed, well drained
    1 cup low fat mozzarella cheese
    4 eggs beaten
    1 (7oz) roasted red peppers, well drained, chopped
    1/3 cup fat free parmesan cheese
    1 tsp dried oregano leaves

    Preheat oven to 350. Mix all ingredients until well blended.
    Pour into greased 9 - inch pie plate
    Bake for 40 mins or until center is set.


    ** Note, when I made this, it took 36 mins to cook & you might want to put a cookie sheet under the pie plate. My pie bubbled over & left a mess in the oven.
