Beef Roll-Up w/ Artichokes and Sundried Tomatoes
-8 oz very thinly cut sirloin
-1/2-1 C frozen artichoke quarters -1/4 (aprox) C Sundried tomatoes, sliced into thin strips -2 slices Provolone cheese (or any italian cheese) -3 Tbs. balsamic vingegar -1 Tbs. minced garlic -salt and pepper Pound beef to get it about 1/4-1/2 in thick. Pour vinegar over the beef, rub with garlic on both sides. You'll get the best flavor if you let it sit and marinate for 1/2 hour to several hours, but it's good without that too. Take the marinated beef and sprinkle w/ salt and pepper on both sides. Place cheese slices on the meat, place artichokes along a line down the center, sprinkle tomatoes over the artichokes. Try to center the filling to leave about 1/2 inch along the sides of the meat. Roll it up carefully and secure w/ lots of toothpicks or use baking string. Bake at 350 for about 30-35 min. Enjoy!
