Meatloaf with Walnuts
 
This is my favorite meatloaf recipe. You can vary the spices as you like but this is the basics. I like to add 2 T of the salt free steak seasonings sometimes instead of the thyme. Enjoy.


-1 egg, beaten
-2T worcestershire sauce
-1/4C tomato paste
-1/2 t dried thyme
-1/2 t salt
-1/2 t pepper
-1/2 large onion
-2 garlic cloves, finely chopped or pressed
-2/3 C ground walnuts
-1 lb extra lean ground beef
-1/2 lb ground turkey or chicken breast
-1/3-1/2 C ketchup, sugar free (or tomato sauce)
-1/4 C parmesan cheese

Mix first six ingredients together. Add in onion, garlic, walnuts, and beef. Mix gently to combine. Add to a loaf pan and shape. Spread ketchup and sprinkle cheese on top. Bake at 375 for about 50 min. Let sit 10 min. Pour off any extra fat and slice.

I tried this last night. I used onion flakes and garlic powder. I also used tomato sauce instead of tomato paste. I turned out really good! The only thing I would do different is add more tomato sauce to the meat. It was a little dry but very tasty!!

I just made this.. it was awesome! I used tomato sauce instead of paste... paste tends to be bitter. I also used the remaining of the sauce (used a small can) for the topping instead of ketchup. The Worcestershire sure makes a great taste, as do the walnuts!

Personally I think should be a stickie recipe!
