SBD Shepherd's Pie
 
SBD Shephard's Pie
Serving Size : 6

1 to 2 cups mashed cauliflower (mock mashed potatoes)
Salt
2 tablespoons Smart Beat, ICBINB or other allowable spread
1 dash skim or 2% Milk
Pepper
1 pound Lean ground beef or turkey (the leaner the better)
1 large Tomato chopped
6 Sliced mushrooms
2 tablespoons Chopped parsley
1 tablespoon Tomato paste (check for added sugars)
1 dash Worcestershire sauce
1 cup Beef Broth (low sodium is best)
1/2 cup plain FF/LF yogurt
1 package (10-oz) frozen green beans (make sure its just green beans, no added junk)
2%/LF cheddar cheese (enough for sprinkling on top)

Combine together in a bowl butter substitute, beef broth, yogurt, and milk. Set aside, this will be your "gravy".

Saute beef until browned, stirring to keep meat crumbly. Season to taste with salt and pepper.

Add tomatoes, mushrooms, parsley, tomato paste, Worcestershire and gravy.

Stir to mix. Add green beans and cook about 5 minutes. Turn mixture into casserole.

Spread cauliflower evenly over meat. Bake at 400 degrees 25 minutes. Remove and sprinkle with cheese. Bake 15 minutes more until cheese is melted and bubbly.




** I haven't made this yet, but I miss the real Shepards Pie so much - I'm hoping this will be a good substitute. Though, I might try layering the meat/beans/"potatoes" for a more traditional affect. Let me know if anyone tries this and how it turns out! **

I made a recipe simlar to this and it turned out pretty good- The changes for my recipe were to sautee up 1 small chopped onion and some diced mushrooms with the meat - I made it a second time with half leftover cauliflower and half mashed sweet potatoes. Both times it was pretty yummy.

Firefly, is there a set of instructions for the beginning that is missing? What do we set aside? Where does the gravy come from? :?:

I tried the this and I really liked it! I didn't understand about the gravey part, but I just put the ingredients that were left with no instructions, and it came out very yummy. The whole entire family liked it.

I made this yesterday...it was ok. Very runny, my potatoes sunk, but the melt cheese made it taste better.Hmmm, maybe I could just make the potatoe & the gravy next time.....thoughts?

Very Yummy. I added extra veggies (green peppers, celery and zucchini) and also added garlic to my "potatoes". My boyfriend LOVED it and didn't know that it wasn't real potatoes!
