Tried this last night and it wasn't bad.....it needs a little zing, but I can't figure out what!! I added a little more garlic than it called for as I cannot get enough of the stuff!!
My kids actually liked this too
Ingredients :
2 (6 oz sirloin steaks)
2 medium pear shaped tomatoes, halved lengthwise ( i used cherry tomatoes only because I like the flavor better )
2 tablespoons extra virgin olive oil, divided
1 medium onion, chopped
1 clove garlic, minced or pressed
1/4 cup chopped fresh basil
pinch of salt
pinch of freshly ground pepper
basil sprigs ( optional )
Directions :
1 ) Please the steaks on a lightly greased grill 4 -6 in. above a solid bed of med hot coals. Cook, turning as needed, until evenly browned and cooked to desired doneness.
2) Meanwhile, place the tomatoes on the grill, cut side up, and brish lightly with 1 tablespoon of the oil. When the tomatoes are browned on the bottom ( about 3 min ) turn them over and continue cooking until soft when pressed.
3) While the tomatoes are still grilling, combine the remaining oil, onion and garlic in a med frypan. Set pan over coals ( or on stove top) and saute. Stir in basil.
4) When tomatoes are soft, stir them into the onion mixture , then set pan aside on a cool area, or cover to keep warm on stovetop.
5 ) When steak is done, place it on a board or platter with a well. Spoon the tomato relish alongside the steak. Season with salt, pepper and basil sprigs if desired.
