I cooked a turkey breast last night. I was craving a regular "Sunday" dinner. I put chopped onion, celery and garlic in the roasting pan with some olive oil. I removed the skin from the turkey breast and spritzed it with olive oil, salt and pepper. While that was roasting I made mashed cauliflower and roasted brussel sprouts. For the "gravy", while the turkey was resting I had the roasting pan on a burner with the vegies in it and added some white wine and chicken broth to deglaze the pan. I mashed up the onions etc to get all flavour out of them and poured the whole thing through a sieve (a la Jamie Oliver's gravy). It wasn't a typical creamy gravy but the flavours were all there. It was a great dinner.
