Easy Salsa Baked Chicken
1 medium sized chicken breast
1 tsp taco seasoning 1/4 cup salsa 1/4 cup shredded, lowfat cheddar cheese Preheat oven to 375 degrees. Place chicken in a lightly sprayed baking dish. Sprinkle taco seasoning on both sides of chicken breast and spoon the salsa evenly over all. Bake at 375 for 25-35 minutes or until chicken is tender and juicy and its juices run clear. Sprinkle evenly with cheese and bake an additional 3-5 minutes. Ruth's notes: I make this without the taco seasoning and it's just fine. I also put the cheese on before it's cooked. I'm for easy! |
I had this recipe and it is one of my favorites.. here is the recipe for the taco seasoning also..
Taco Seasoning Mix Replaces one packet of purchased taco seasoning. 2 tsp. paprika 1 1/2 tsp. salt 1 tsp. onion powder 1 tsp. chili powder 1 1/2 tsp. cumin 1/2 tsp. garlic powder Mix and store tightly covered in a cool dry place. Makes 2 1/2 tablespoons. |
I make this in the crockpot......just throw frozen boneless chicken breast in and cover with salsa.....cook on low for 8 hrs :p I serve it over salad with sour cream and cheese!!!

Me too KDHW! One of my favorites! The original recipe that I was given, you mixed the sour cream with the salsa in the crock pot. I've made it both with the sour cream and without and its delicious either way. Super easy!

This was so delicious! I changed it a bit. I cut the chicken into bite size chunks. I sprinkled about half a pack of taco seasoning on top of the chicken. I topped it with a jar of salsa. I baked it as directed. Then, I added about a half cup of RF cheddar on top and cooked until it melted. We had dark kidney beans as a side and they were a great pair. It was such an easy meal. YUM! My husband loved it.
