Chicken Marsala

  • 4 boneless chicken breasts[ you can cut them lengthwise and pound them to make they more tender]
    1 cup mushrooms
    2 cloves garlic
    3/4 marsala
    1 TBLSp fresh parsley or 1 tsp dried
    salt/pepper to taste

    optional
    fat free evaporated milk

    lightly coat your skillet w/ veg. spray - brown your chicken until it is cooked.

    transfer chicken to plate in the same pan add your mushrooms and garlice saute add your marsals and parsley and simmer uncovered until it is reduced by half salt and peper to taste. addd chicken and let simmer for a few minutes turning the chicken. and serve

    now if you would like a cream sauce you can add about a 1/4 cup or more of fat free evaporated milk- {I don't know the carbs in the ff evap. milk but the regular has 3 carbs per 2 TBLSP- so it should be less}
