Turkey or chicken manicotti
I just found this recipe online, but although it calls for deli turkey slices, I think pounded-out chicken would be better. Pound out the chicken until thin and put the ingredients in, and roll up, using toothpicks if necessary to hold.
Ingredients: * 16 oz low fat or FF ricotta cheese * 1 c shredded lowfat mozzarella * 2 eggs * 1/4 cup grated parmesan * 1 t Italian herbs * pinch nutmeg * salt & pepper * 8 slices deli turkey breasts, sliced about the thickness of a tortilla (or pounded-out chicken breasts!) * 1 cup low sugar tomato sauce Directions: * Mix ricotta, eggs, 3/4 cup mozzarella, parmesan and spices. * Spoon filling down center of each turkey sliced, dividing evenly among 8 slices. Roll up. * Spoon 1/2 cup sauce onto bottom of casserole dish. Lay rolled-up "manicotti" on sauce, top with rest of sauce. * Sprinkle with remaining mozzarella. Bake at 350 till heated and cheese on top is bubbly. |
Sounds delish!!! I think I'd throw some spinach in, too.
