Easy Eggplant Casserole

  • I got this recipe from a South Beach Diet chatgroup in 2004 and it's been a family favorite ever since.

    Easy Eggplant Casserole


    1 cup spaghetti sauce
    3/4 cup shredded mozzarella cheese
    3/4 cup cottage cheese
    2 T grated Parmesan cheese
    3/4 lb eggplant sliced 1/2” thin

    •*Grill eggplant on a Foreman grill for 5 - 10 minutes (until soft).
    •*Spray 8X8 baking dish with non stick spray.
    •*Spread half eggplant slices over bottom.
    •*Spread half the sauce over the eggplant.
    •*Mix cheeses and spread over the sauce.
    •*Layer remaining eggplant slices and top with the rest of the sauce.

    Bake at 350 degrees for 30 - 35 minutes.
    Let sit for 10-15 mins before cutting.

    * I have a hard time finding small enough eggplants so I always end up using more cottage cheese and nearly a whole jar of NSA spaghetti sauce, and baking it for 45 minutes.
