I have adapted Easy salsa baked chicken recipe

Someone may have posted something similar in the past but here goes: Chicken breast browned in a dutch oven. When mostly done, take out, cut up chicken and deglaze pot with 1/3 cup salsa & water mix. Add chicken back in with cilantro and juice from half a lime. Add one can of chopped tomatoes and a 1/2-3/4 cup of salsa- more if you wish. Simmer on stove until it reduces a little and thickens.. Add 2 cups canned black beans, rinsed and drained. Top with low fat cheese and bake until cheese is brown and bubbly at 350. I use medium heat salsa, and when browning chicken breasts I season with salt, pepper, cumin, and a little cinnamon. I believe this is all phase friendly. Hope others will enjoy! Deb |
