Hi Everyone,

I tried this today and it was ok....i did notice that it was a little sweeter than I would prefer and I used the 1/4 cup of Splenda granulated. The inside was delicious tho =) Next time I will use less splenda and see what happens!

We have been experimenting w/ the bread part of this recipe. We omit the splenda and oil, and make the batter into "corn cakes" by cooking them like pancakes.

You can omit the cumin and add cinnamon (1 tsp.) and make them into phase 1 pancakes. Serve with sugar free syrup.

We also used them as hamburger buns!! Still trying to figure out what to put in spice wise to replace the cumin since it is a bit overwhelming flavor wise. They hold up very well.

After looking at this recipe forever, I finally had all the ingredients and made it tonight. Surprisingly tasty! Amazing how the beans bake up like a grain product!

Even DH and DS1 liked it. Will certainly make it again.

This. was. AMAZING!!!!

Funny story - DS saw me making it, and I told him that it was for me. (he saw the bean part) When he sat down to supper, he had an absolute cow that he had to eat the stuff I was making. Fine dear - that's your dinner.

He finally caved, and then got a huge smile on his face...he *loves* it!! I really, really liked it. I will say, I doubled the pepper, added onion, and no squash. Delicious!

I should add that I love this as well. I rarely have squash on hand and usually substitute celery; just cook it a bit to soften it up.
