Tuna Muffins
 
I found this on a Low carb Site and Beachified It

Tuna Muffins

24 oz Tuna (I use chunk Light) Salmon or Crab would be good too
3 large eggs
2 celery stalks
1/2 (or so) Red Pepper
1 medium Onion
1/2 cup RF Cheddar
Salt Pepper and Old Bay to taste I used about a tbsp of old bay

Drain Tuna Really well
Preheat Oven to 350 Spray Muffin Tin with cooking spray (or Loaf Pan)
Chunk up Veggies and toss in Food Processor or dice very fine
Beat Eggs Mix in Veggies Tuna Spices and Cheese Spoon into Muffin tins and bake for 30 min

It makes 12 2 is a serving
TunaMuffins
lunch 0.17 202 calories 7g fat 1g fiber 32g Protein

In the previous incarnation I added Parmesan cheese

DOn't use that much Old bay!! it's a little too salty!

I tried these last night Kierie, and they are really good. I used about 3/4 T Old Bay, and no pepper or salt (OB has both in it already). Mine stuck to the muffin tin, even though I sprayed with cooking spray, so next time I'll use liners.

Hmmm I think I'll cut the recipe by 1/3 and bake in my silicone muffin cups. I need to eat more fish!

Do you think it would taste good without the cheese? I know somethings just need the creaminess of cheese.

I'm bad about picking up canned tuna whenever it's on sale and not using it much. sounds like this would be great way to use it up. I tend to just force myself to eat it on salad or something.

Hmmm. Interesting. A tuna pabuca, but without the bread crumb binder. Kind of like a crab crake. I may have to try this sometime.

Is this really 24 oz?
I decided I wanted to make this today, but all I have is a can that is 5 oz and pouches at are 2.5 and 3.5 oz.
I just wanted to check b/c 24 oz seems like a lot and I wanted to make sure I'm reading it correctly. (plus that amt might limit me if I wanted to make it with crab. $$)

Good question! A quick Google search yielded several similar recipes that called for 2 6-ounce cans of tuna with 2 eggs for 6 muffins. Here is one example.

Here is a simplified version that calls for 3 7-oz cans = 21 oz, which is close to the 24 oz posted above, and 3-4 eggs for 12 muffins.

It may just depend on whether you have 7-oz cans or 6-oz cans to start with.

I had forgotten about these... they stink up the kitchen when they are cooking but they are really good!

When I looked at the amt of tune in a 2.5 pouch, I can see how you would need 24 oz to make 12!
Thanks for the note about the smell- my kitchen smells like the white Chili right now- I think I'll let it air out before making something else with a strong scent!:)

How well would these freeze? I don't think my dd would eat these and I often need something for quick in the morning or a snack.
