Default Chicken in gumbo sauce

I was looking through my recipe books to find something SB P1 friendly tonight, and found this:

Chicken in gumbo sauce

2 cups cooked chicken, cubed
1 onion
1 green or red pepper
1 can tomatoes, pureed
1 teaspoon worcestershire sauce
1 cup chicken stock
1 bay leaf
salt, pepper, basil and parsley

Brown the onion and pepper (all cut finely) in a little oil (I used a non-stick pan and no oil). Add the tomatoes, worcestershire sauce and stock and stir. Add bay leaf and spices and let simmer for a few minutes. Add chicken and warm through; serve with rice.

I obviously didn't have the rice; instead, I added a can of borlotti beans (my favourite beans) and it was absolutely fabulous. Seriously, this is going on my list of things to cook for guests who will never guess that it's diet food!

I had it with a large salad.

Ruth's notes: I think this would serve two people. Borlotti beans are a type of kidney beans. Substitute as necessary.

Sorry - forgot to add serving size. Without the beans it would probably be enough for 2, after adding the beans we got 3 generous servings.
