Reg 6 June 99 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound lamb -- 1/2-inch cubes 1 can diced tomato 2 medium carrot -- cut in 1" strips 2 teaspoons chili powder 1/4 teaspoon ground cinnamon 1/2 teaspoon sugar 1/4 teaspoon salt 1 cup green pepper -- chunks spray 12" nonstick skillet with nonstick veg spray. Add lamb. Cook over med heat for 4 to 6 minutes, or until meat is only slightly pink, stirring occasionally. Drain. Stir in remaining ingredients, except pepper chunks. Cover. Cook over med heat for 10 minutes, stirring occasionally. Stir in pepper chunks. Re-cover. cook over med heat for 7 to 9 minutes, or until vegetables are tender, stirring occasionally.
