German Diabetic Cookies Recipe
Hello! I just thought I would share this recipe I have......I make them every year for my MIL and my uncle, both are diabetic. They are good, my kids even love them.
1/2 c. butter 1 egg 2 tsp. vanilla extract 1 tsp. baking powder dash of salt 1 c. flour 1 c. dates (chopped and unsugared) 1 c. shredded coconut 1 c. walnuts or pecans Cream butter, egg and vanilla til mixed and fluffy. Beat in baking powder, salt and flour, mixing well after each. Mix in dates, coconut and 1/2 the nuts. Form dough into balls, then roll the balls into logs, about 1 1/2 in. thick. Roll the logs into the remaining nuts. Wrap in wax paper and chill or freeze til firm enough to slice. Preheat oven 350 degrees. Slice cookies 1/4 in. thick and place on nonstick cookie sheet. Bake 10-12 minutes, til light golden brown. Cool on wire racks. |
