Looking for an Easy Diabetic Supper Recipe

Hi -

I'm looking for an easy diabetes-friendly supper recipe. Preferably one that can be fixed in a crock pot as I HATE to cook, but am having friends over for dinner next weekend, and all of us either have diabetes or pre-diabetes.
