Pumpkin Squares

  • My mom got this off the CarbSense website. It's GOOOD!!!!!!

    Pumpkin Squares

    1/2 cup Carbsense Baking Mix
    1/2 cup ground walnuts
    3/4 cup Splenda
    1 teaspoon ground cinnamon
    1 stick butter
    1 egg
    2 tablespoons heavy cream
    2 tsp vanilla extract
    1/3 cup canned pumpkin

    Combine all dry ingredients in a mixing bowl. Add softened butter and stir. Then, add remaining ingredients and blend gently. Spoon cookie dough into a greased 9-inch baking pan and bake in pre-heated oven at 325 F for about 20 minutes, or until golden brown. Allow cooling for 5 minutes before eating.

    Yield: About 16 pumpkin squares

    Net Carbs: About 3 grams per square
