Per your request: Oat Bran Cookies

From the 1st Traveler's Choice Internet Cookbook. (www.virtualcities.com)

These are quite good and are easy to make. And remember, all of that good oat bran and oats helps balance out other ingredients that might make you cringe. Seems to me that these would be a nice alternative for those folks who eat breakfast bars. No preservatives here!

Doris's Oat Bran Cookies

3/4 cup vegetable oil
1 cup brown sugar
1/2 cup regular sugar
2 eggs
2 teaspoons vanilla
1-1/2 cups rolled oats
1-1/2 cups oat bran
1 cup flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 cup raisins or chocolate chips (I use 1/2 cup each)
1/2 cup chopped nuts (I use pecans)
Preheat oven to 350 degrees. Beat oil, sugar, eggs, and vanilla. Add oats, oat bran, flour, salt, and soda. Stir to blend well. Add raisins, chocolate chips and nuts. Stir to blend evenly. Drop by Tablespoons onto ungreased cookie sheet. Bake 12 to 15 minutes. The cookies should not brown much. Remove to rack for cooling.

Makes: 4 dozen

However, LLS says: Dropping from a small ice cream scoop, I ended up with about 3 dozen...I don't THINK I ate a dozen's worth of dough! :)

Truly Great Cookies

I just made these cookies and wanted to pass them along. The nutritional information, given with the recipe as follows: 82 cals 2 grams fat each. These are so good to have around for kids, and for the health aware mom who may eat their kids treats!

Oat Cookies
1 mashed banana
1 cup brown sugar
1 cup sugar
1/4 cup butter (can be made vegan by using oil instead)
1 1/2 t vanilla
1 1/2 t cinnamon
1/2 ww flour
1 cup white flour
1 t baking soda
1/2 teaspoon salt
2 cups oats
3 T water or soy milk

Mix brown sugar, sugar, butter ( or oil), and water. Add banana and vanilla. Mix together flour, soda, cinnamon, salt, and add to sugar mixture. Stir in Oats. Drop Tablespoons onto greased sheet. Bake 350 for 12-13 mins. Let stand 5 mins before removing from sheet.

I hope you enjoy these, they are so yummy
I got it off of vegweb.com, so great things to try on there.

How many cookies does this make for the 82 cals each?

amyn 06-15-2006 07:54 AM

My batch came to slightly above 2 dozen good sized cookies. I used a tablespoon to drop them onto the sheet. Enjoy, let me know what you think.
