Rab's Chocolate Peanut Butter Cookies
--------------------------------------------- Please check your labels as they may be different than the products I used!!! 2 TB Butter 1/3 cup peanut butter (check label, mine was 5.4 carbs) 1 square unsweetened bakers chocolate (8.02 carbs) 1/3 cup ricotta cheese (2 carbs) 1/4 cup protien powder (mine was 2.25 carbs, some are O carbs!) 10 pkgs sugar twin (5 carbs) Preheat oven to 350 degrees. Melt the butter, peanut butter and chocolate in the micromave. Put the rest of the ingredients in a mixing bowl. Add the melted combo to the dry ingredients and drop by heaping teaspoons onto a greased cookie sheet. I flattened the tops and baked for 7 - 8 minutes. They are a bit crumbley, some of the broken ones you can add to a Jello/Whipped Cream dessert. I also keep these in the freezer to pull one out when I want one. Makes 20 medium size cookies at 1.13 carbs each. (If you want bigger cookies just take the total carb count (22.67) and divide by the # of cookies you made for a carb/cookie count) NB: I made a batch of these and FORGOT to add the AS so .... I crumbled them all up, mixed in the AS and put it in the freezer to pull out and add to whipped cream (makes a great dessert)! |
