THE BEST CHOCOLATE CAKE!!
--------------------------------------------- This really is so much like the real thing, I was surprised! You've got to frost it, tho'. It's even dense rather than crumbly like most Atkins stuff. Hope you like it, let me know. 2 eggs 1 T. canola oil 2 T. sour cream 1/4 c. cream 1 tsp. vanilla 2 T. soy flour (yuk, but you gotta have it!) 2 T. cocoa 1/4 c. whey protein 1/4 c. wheat germ 1 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt 3 tsp. stevia (or another equivilent sweetener) Mix wet ingredients with wire wisk. Mix dry ingredients and add to wet. Spray an 8" cake pan with Pam. Pour batter in and bake @ 350 for about 15 minutes. Watch it cuz it cooks fasts! I frosted it with 2 T. butter mixed with 1 square unsweetened chocolate, 1/2 block cream cheese, peppermint extract and enough cream to make it the consistency you like. YUM! Total carbs in the cake are about 30 so only about 4 per serving and the frosting adds very few. Enjoy. Daisy 177/168/130 |
