disturbingly easy low carb cookies

  • i made some cookies with almond flour and egg white. this time I added some chocolate designer whey. They're more like protein snacks than dessert, but still tasty. The came out really dry however. If anyone has any ideas let me know, but this is a really good starting base, I think.

    2/3 cup of flour
    1 1/2 egg whites
    one scoops of designer whey.

    bake for about 25 minutes at 300 degrees.
  • if you want a little moisture, try adding some apple sauce! or even banana or some other fruit puree may work if you dont like apple.
  • but that would up the carb count, i would think.
  • What if you used a whole egg and an egg white? Would it make it too thin and spread out too much when baking? Wouldn't raise the carb count just the fat, but for 20 cookies not too bad. What about a little flax meal?
  • You could try adding yogurt to increase the moisture. That would add some carbs, but not as much as adding fruit would.
  • There is a "no sugar added" applesauce. I have use applesauce many times in cooking and you cannot taste it once baking is done.
