Black Forest Cake made with Vitamuffin mix

  • This is one of my experiments that came out really good! I just posted this recipe on my blog and wanted to share it here too.

    1 vitamuffin deep dark chocolate muffin mix
    1 can light cherry pie filling
    3/4 cups water
    1 large egg or 2 egg whites
    light cool whip, optional

    Preheat oven to 350 degrees. Mix all ingredients just until blended. Pour in greased 8 x 8 inch baking pan and bake for approximately 28-30 minutes.
    Tips: I cut this in 9 pieces and topped with cool whip for 4 points per serving. If you do this in muffin cups you should get 12 for 3 points per serving.
    Even though the directions on the package said bake at 400 degrees I decided to try 350 instead but you will have to adjust time and temp for muffins.
    The toothpick test doesn’t really work with this because it is so moist so you just have to watch it. I started checking after 20 minutes.
    This tastes best cold. For maximum freshness they suggest storing in the freezer. I cut up a few pieces and put in the fridge and froze the rest.
