Smile Phase 1 Strawberry Ice Cream with pictures

I played around this morning, trying to get a good flavor before I actually froze it. It really is delicious. I only had a few spoonfuls and then put the rest back in the freezer because i'm not sure how much of it I can have. Here is the recipe.

1/2 cup 1% milk
1/4 cup Fat Free half & half
1 oz Neufatchel cheese (or lowfat cream cheese)
1/2 tsp sugar free strawberry jello mix
1/2 tsp vanilla extract
1 packet splenda

Blend together in blender or food processor and put into plastic container and place in freezer. I stirred it while it was freezing, about every hour or so. After about 4 hours, this is the yielded product (see pics below) It is flavorful, not as creamy as ice cream (there are tiny ice flakes from the milk) but the cream cheese gives it a rich flavor and its very sweet. My son had a taste and that was all it took...he ate half of my portion and asked for more.

Anyhow, I know the milk is fine as well as the cream cheese, jello, extract and splenda. The only thing i'm not sure on is the fat free half & half. If anyone can tell me if its ok to have it, in that quantity, then i'd appreciate it. This is a wonderful way to get your dairy in!

I think so. After whipping it up in the blender, there was 12 ounces of fluffy liquid so that would make two generous 6 oz servings. I divided my second batch into two containers. My older daughter was begging for it too....its an awful thing when your family can eat anything they want and still insist on having your phase 1 treats!

just to update on this. I took the ice cream out and put it through the blender again after it was frozen and then put it back into the bowls and froze it again...the consistency is just like ice cream now.
