Almond Cheescake Squares
Ingredients:
3 packages (8 oz each) of low-fat or fat-free cream cheese 5 1/2 tbs. of Splenda (equal) or 18 packets 2 eggs 2 egg whites 1 cup low-fat / fat-free sour cream 1/2 tsp. vanilla 1/2 tsp. almond extract 1/4 cup sliced almonds Pre-heat oven to 300 degrees. Beat cream cheese until smooth in a large bowl. Beat until smooth the rest of the ingredients, except almonds. Sprinkle top with almonds Bake at 300 degrees or about 30 minutes or until set. Cool until you can touch the pan. Place in refrigerator until chilled; about 6 hours. Cut into 24 squares and serve. I'm sure you could put them in individual muffin tins just adjust the cooking time.... Because there is Sour Cream in this, you must count it as one of your daily dairy allotments. :) Enjoy! |
Cheese Cake
I made this the other night and I was a little disappointed. I think next time I will up the splenda. Is this really South Beach Friendly.....how is it counted

It is SB friendly but cream cheese is kind of those iffy "we'll get back to you" on that items because it doesn't have enough protein to be considered a dairy product and isn't really a fat, so I'd just be careful on your servings with it.

Heya I made this last night, tried it tonight. It was uhm, salty? I remember when I tasted the batter, thinking to myself 'that doesn't seem sweet enough'. I used comparison to the brownies then. The brownies yield less, but called for more Splenda. I too will up the splendo next time. My sister and I dumped an extra packet on our pieces then mushed it up and then it tasted GREAT! :)
Just curious, could it have been 5.5 tbs? instead of teaspoons maybe? |

Nellie, I posted this in the dailies and the mods figured to count it as a nut serving if the almonds are there, and a dairy just to be safe. will, ;) same thing a nut serving if you use the almonds and a dairy if you want to be cautious. |
No problem! Like I said, it was completely salvagable by adding an extra packet to your piece before eating. Now, I just need to eat this batch up so I can give it another go! After adding the extra bit to it, it was actually really really tasty!
