Potato Stuffing

  • This is for a small turkey-6-8 pounds so adjust the amounts accordingly.

    5 medium potatoes 1 tsp. salt
    1/4C margarine or butter 1/2 tsp. sage
    1/2C chopped onion 1/2 tsp. thyme
    1/2C chopped celery 1 egg, beaten
    2C toasted bread crumbs

    Pare and quarter potatoes and boil in 2 inches of water and 1/2 tsp salt, until tender. Drainand return to pan. Mash or beat until smooth. Heat slowly to dry out-stir. In hot butter or margarine, saute the onions and celery until tender, Add to potatoes with other ingredients.

    Our stuffing has sausage, and crackers..... I'll have to ask mom how many POUNDS of butter she puts in. When we make stuffing its enuf to feed an army.

    I can smell it now...... she used to cook it for hours and hours and hours and the house just smelled heavenly.... crap now I'm hungry LOLOL
