Vegetable Oil Substitute
 
What could I use as a substitute for vegetable oil in my pancakes? Just a healthier oil?

I use olive oil or canola oil in all my cooking & baking. They are both healthy oils.

I use canola or Olive oil if neccessary. I try to use Spray Olive or Spray Canola oil first, since it is way lesss calories. Sometimes if you are pan frying vege's 1 teaspn oil to 2 teaspn's water works really good also.

I don't put oil in my pancakes! :)

Sub apple sauce or apple butter for the moisture and a lot less calories.

Just an update. I tried applesauce in the mix and the pancakes refused to cook all the way through. I'm not sure if it's cause of the type of mix or what. They just wouldn't cook through for some reason. I might try canola or maybe even coconut oil. Olive oil seems just as bad as vegetable oil to me. The nutrition is exactly the same.

Ilene has a great recipe for protein pancakes--just egg beaters, cottage cheese, oatmeal, and sweetener of your choice (I use Splenda). They taste like regular pancakes to me (although it's possible that it's been so long since I've made real pancakes that I don't remember what they taste like :lol:.

You could also try using 1/2 the amount of oil originally called for in the recipe and replacing the other 1/2 with pumpkin puree or applesauce. That might solve the cooking problem and would be healthier than the full amount of oil.

Or here's another pancake recipe with no oil:

Oatmeal Banana Pancakes
1 banana (3 to 4 oz)
1/2 cup egg beaters
1/4 cup 1% milk
1 tsp baking powder
1 tbsp flour
2 packets instant oatmeal
1 tbsp cinnamon
1 tbsp vanilla

Mash banana and combine with the rest of the ingredients. Microwave for 30 seconds or so to give the oatmeal a head start on cooking, then cook like regular pancakes. Makes enough for two servings at about 300 calories each.
