momtopands- How exciting that your daughter was able to come home last night? How was her first night home?

ange I have always heard that the last few lbs. are the slowest to come off. Don't think of it as failing if you don't make it, timed goals are really difficult because you can't control what your body decides to do when it comes to the scale. You have already noticed a difference in the way your clothes fit, so that is a major NSV!! I really love taco salad, all the taco fixings with no shell. I haven't had that in a long time so I think I am due. Last night my husband made a really good meal, super simple too. It had cut up chicken breast, broccoli, and rice. The sauce for it had a little bit of peanut sauce, soy sauce, honey, and a handful of other spices. I can get you the recipe if you want. Also, there is a Moroccan chicken he makes that is delicious. It has chicken breast, rice, chick peas, tomatoes, and more stuff for the sauce, let me know about that one too. I love roasted peppers, onion and Italian sausage with a little bit of parmesan cheese.

My guests are gone this morning, and I don't have anything social planned, and my period should be arriving any minute. So I have no excuses left, and hopefully will stay on plan. Yesterday I ate a giant costco muffin. For no reason really, and then I felt sick.

Kfunk Our first night home was not too bad. She's not liking some of our "new normal" but everything we're doing is to help her. No teen likes that anyway but I'm the mom so that's the way it goes sometimes.

Ophelia You're starting out the week right and i'm just amazed at how far you can walk. So far the farthest i've walked is 1.7 miles but that's in addition to my daily boot camp workout so i'm improving! Keep it up and you'll see some progress again!

ange I have also heard that the last bit is the hardest to lose but you are doing well. We will be celebrating with you!

Well i've been down the last couple of days but I think TOM is slowing the progress. I am finally back down to my lowest from last week after the gardening marathon and it's sticking. Hoping to see less than 254 in the next day or so!

I forgot to weigh today, so I thought I'd do personals instead!

momtopands: I hope the reunion with your daughter went well!

opheliaphoenix: I ended up with a long walk late yesterday, too -- it felt great!

ange82much: I had some success with caponata when I grew eggplant. It froze well and was yummy as a sidedish or a sauce over all kinds of things.

kfunk6113: Your chicken with gussied-up peanut sauce sounds amazing.

nicoley73: Commercial baked goods make me feel horrible, which doesn't stop me wanting them -- amazing. I am gradually getting better at reminding myself at the right moment that this treat is not worth it for many reasons.

ange82much: I eat a pretty boring array of meals, so no help there, but I hope the last week of May goes well for you! Kfunk's words are spot on about everything I've ever heard about the last few pounds, as well...even if you don't make it exactly on time, I definitely wouldn't consider it a failure, either!

nicoley73: I hope the uneventful day today helps you stay on-plan, as expected! And, about the muffin, I have had similar experiences where I have eaten something kind of (or very) unhealthy that I've eaten in the past with no issue and then become nauseous or sick after eating it. It's funny how our bodies will acclimate to things that are so rough on our systems over time! And, I was always wondering why I never felt very good most days back then...lol.


momtopands: I'm glad that things with your daughter being back home are going well so far, despite the inevitable adjustment period to the new stuff. I hope it continues to go smoothly and that TOM is nice to you on the scale, as well!


gardenerjoy: Evening walks are my favorite!

Weigh-in was 175.4 today, which means I hit my month's goal -- for the first time since January! It may pop up a bit tomorrow, because I was out in the hot sun for over an hour today waiting in line at a emergency pickup** today, so I may be a bit dehydrated despite the extra water yesterday. I also tried a bellydancing video last night, and I had no idea how weak my arms and core were until now...it was way more intense than I expected it to be! Or, maybe I'm just that out of shape.

(** The emergency pickup was because there was a bomb threat at our daughter's high school this morning, so they evacuated the entire school out to the district office parking lot across town...and, it has been a FIASCO. Literally thousands of people in line outside of the building, wrapped around and through the parking lot and even out and down the main street it is located on. I started feeling faint - similar to the day I actually ended up passing out and didn't want to risk anything - and our toddler started throwing a fit, so I had to leave and will have to return in an hour or so to get her when it starts clearing up. Many parents were doing the same thing, especially after there were other parents there starting to yell and cause a commotion. It is a circus out there right now. All is well, though! The kids are all safe, and I don't know if they even ever found anything on campus or if it was just someone pulling an incredibly stupid, illegal prank to get out of class. )

kfunk oooh, the peanut, soy, honey sauce recipe sounds delicious. Can you share? (I haven't really been eating rice, but would just substitute other veggies instead). Sounds yum.

thanks GardnerJoy, i'll look up the caponata too - I've never heard of it, but sounds perfect if it's versatile to use in different ways! I did roast up some eggplant yesterday though, with leeks and capsicum, and a load of herbs, and a tomato/garlic sauce. It was a bit of a make-it-up-as-you-go kind of dish, but was good!

Nicoley - Hopefully it will be easier now that your guests are gone.

Momtopands- She will get used to the new way of life and settle in. Once she has kids of her own she will realize that everything you are doing was to help her get better. That is awesome that your low is sticking!!


Gardenerjoy- I also have a difficult time with baked goods like that. It’s a huge victory that you have been successful at reminding yourself that its not worth it!

- YAY on reaching your goal, that is amazing!!!! I am so glad that the bomb threat at your daughter’s school ended up being a false alarm. It is so scary what goes on these days. My 1st grade daughter knows way too much about school violence than she should at this age. Her teacher had explained what happened most recently in TX and why the lockdown drills they do are so important. I hope that you didn’t get too sunburned waiting in that line.

Kelijpa- Look at you! You are close, keep up the hard work! !

Ange- I hope that when you wake up you get a new number!! When I get home from work I will get you that recipe!!

I love eggplant with garlic sauce. I make it with the thin japanese eggplants - I can get them at our farmers market. I eat it over rice but you could eat it plain or over cauliflower rice. I omit the pork.

gardenerjoy - I love caponata! I learned how to make it from my dad. When we were kids, my siblings and I hated it at first and would obnoxiously refer to it as "craponata." Then, it was like a switch flipped for all of us around 12 yrs old, and that's when we each started loving it. I've never tried freezing it. That's great to know that it freezes well.

nicoley - Mmm, that recipe looks really good! I'd likely eat it like you do, over some rice and omit the pork.

ophelia - Congrats on hitting goal! You're doing so well!

Hey kelijpa, good to see you and great progress.

Good luck with the 55.x, ange!

momtopands - Congrats on being back to last week's lowest. Those fluctuations can be so annoying. I hit my month's low over a week ago, then bumped up a couple pounds, and am now back to that low. Good luck on sub-254!

ange82much: A little hiccup today, but hoping to be able to get it moving back in the right direction...at least after this weekend, if nothing else.


kfunk: I'm glad it ended up being nothing, as well! I remember having a threat or two even back when I was in high school, but it was always someone being stupid and just messing around. When she first called, I wasn't too worried because bomb threats usually turn out to be nothing, but - when they were actually evacuated and bussed off campus - I got a little worried. But, with everything going on in the world today and all the stuff in the news, they felt that they had to do the max protocol, just to be on the safe side. Which I can understand, considering. Just crazy that we have to assume the worst these days. And, unfortunately, I did get sunburned! I was hoping I wasn't out there long enough, but no luck. It fully developed last night, and the back of my neck and my arms are pretty red. Thankfully, my face and chest are just a tiny bit pink, because I was facing away from the sun as much as I could. I would have brought sunscreen if I knew it was all going to be handled that way, because I burn so easily...I should probably just leave some in my car at all times!


nicoley73: I may have to try it that way...the only time I have ever tried eggplant, it was cut really thick and was still very slimy in texture, even cooked, so I wasn't a fan. It also didn't seem seasoned very well and was kind of plain. I love garlic, though, so I'm sure this would be an improvement either way!


Chunkah: Thank you! Hopefully I can get it back tomorrow, since I did bump up a little today afterall...lol. I'm happy to know that I was able to hit it, though!

Between not being able to sleep until almost 4am last night and rehydrating, my weight was up a bit to 176.0 today. But, that's okay...I know that I've hit my goal for the month, so as long as I can get it back below that line this week, I will be happy. Also, I won't be able to do a weigh-in tomorrow, since I will be out of town picking up my husband from the airport at my usual WI/lunch time....I'm incredibly excited to see him, but I know we'll be going out on a date this weekend to celebrate him being back home, so I'm hoping I don't undo any of my recent progress in the meantime. Going to do my best! I will check back in with you guys on Saturday. Until then, I hope you guys enjoy the rest of your week!
