Healthy pumpkin recipes!!

YUM! I love pumpkin season and am always looking for healthy ways to use pumpkin in recipes. I have a pumpkin chocolate chip overnight oats recipe on my website that I eat ALL the time.
Ingredients for one serving 1/2 cup old fashioned oats 1/4 cup plain greek yogurt 1/3 cup pure pumpkin (not pumpkin pie filling) 1 teaspoon chia seeds 1 Tablespoon honey dash or two cinnamon Tablespoon of chocolate chips or cocoa nibs milk of your choice (low fat, soy, almond, coconut, etc) – enough to cover ingredients Directions: Simple enough, all you do is mix all ingredients in a jar. Put lid on and shake till combined. Put in the fridge overnight or at least for a few hours to soften the oats. Once ready to eat, you may need to add another splash of milk or water, depending how much has been absorbed and how you prefer the consistancy. Enjoy!! |
I love pumpkin soup! :) I just eyeball the ingredients - cut up some fresh pumpkin into cubes, add a few peeled tomatoes (put them in boiling water - the flesh will start to peel off in seconds - then take them out and strip the skin), one big or two small sliced onions, some water and a bouillon cube or chicken stock.
Stick it on fire until everything is soft, then use an immersion blender to turn it into a nice puree. Add spices to taste (I like to put in a touch of hot mustard) and a bit of grated cheese if you feel like it. Heaven in a bowl :) |
where do you get chia seeds? Is that a health food/natural food store item, or can you get them at a "regular" grocery store?
