We had tacos last night. I usually just eat the meat, cheese, sour cream, salsa, black olives, and tomatoes on a big bed of romaine lettuce. Also, hubby made low carb jalepeno poppers, and they were HOT! But, they were very good!

I ended up taking chicken breasts and dipping them in a mix of egg and mustard, rolling them in coconut flour and cooking them on the George Foreman. I bought some coconut flour from Netrition -- it only has 1 gram of carbs per serving and it tastes great. Steamed some green beens too.

This morning I had lettuce leaves with mayo, tomato and bacon - my gluten-free, low-carb BLT.

I'm still not feeling very hungry though.

I'll have to find coconut flour! I love eating it shredded for desert. :)

Tonight is roasted chicken, broccoli in cream sauce, and salad.

Last night's dinner was wonderful!

We had grilled filet mignon that we got on sale at the grocery that was fantastic along with grilled zucchini. Yum!

Susan - does the coconut flour have a strong coconut flavor? just wondering. It sounds good. Boy you have some great meals. IF I lived in Denver I'd be "stopping by " alot around dinner

We are having grilled chicken, grilled squash and salad for dinner tonite. I made enchiladas last night with LC tortillas and a salad, everyone else had beans and mexican rice with theirs.

I cooked baked chicken, boiled broccoli, and boiled squash and onions for Memorial day dinner. I am having leftovers for dinner tonight. The squash and onions was SO good. I have never really liked squash before, but these came off the farm this weekend and were really young and sweet tasting.

Needtolose - the coconut flour was sweet and did have a decent coconut flavor -- not too strong. It was very good with the chicken.


I had fajitas (combo beef and chicken) with the cheese, onions/peppers and a little guacamole with tomatoes and lettuce at a Mexican restaurant last night.

Breakfast today was bacon and sausage with a small portion of blackberries and raspberries. Lunch today is cheeseburger with salad.

Hockey - before I place an order for that coconut flour, is there anything else from there that you would really recommend?

Maggie, I loved the Kitchen Table Gourmet Wafers Aged Parmesan crisps. They are nothing but baked parmesan cheese. Less than 1 gram of carb each. I had to fight my husband for them and he's not even doing low carb. I finally had to bring them to work to keep them away from him.

I also bought a low-carb brownie mix, but I haven't tried it yet. You have to add unsweetened baker's chocolate and I don't have any at home.
