Check the carbs. I believe there is an induction limit on cheese so stay within your limit on that but riccotta is not a lot of carbs, so use your judgement and may be some of the atkins girls can let you know otherwise

I'm not familiar with Riccotta, but the book says "full fat, firm, soft and semi aged cheese". Not sure if that helps?

1/4 cup of ricotta cheese has 3 grams of carbs. Unless it is "whole milk" ricotta then it has 1.9 grams
