Cathy - The equator trek is our 2004 exercise challenge. We're trying to do enough exercise to get us around the equator in one year. Exercises that are measurable in miles get logged that way. Other exercise, like aerobics or weight-lifting, are counted as 1 mile for every 20 minutes. Feel free to join in!
I use CarbSense herb and garlic pizza crust mix. It's a little tough to work with as the dough is very rubbery. I tend to use a small amount of sauce (for some reason pizza sauce is lower in carbs than marinara), cheese, olives, italian sausage, and pepperoni. Because the crust is rather filling, I can cut smaller pieces and normally be satisfied.
As for carb count. I generally like to stay under 20, but on occasion I will have a "high" day and go up to between 25 and 30.

Star: I tend to like all vegetables with very little done to them, but mustard greens need a little something. So, I just add some butter and garlic salt to the greens. I think they're pretty good -- I don't know if most people would think that or not... The best way to have them, though, is to boil them with a ham hock. They are delicious! But, it smells up your house really bad, and I'm usually not up to that much trouble or that much stink!
