Low-carb thickener
Does anyone know of a low carb thickener for cakes and icings? I want to make a flourless white or yellow cake with coconut icing. I'm trying to avoid using canned coconut (Ancel) in heavy syrup and make my own low carb syrup with shredded coconut. Any ideas would be greatlyappreciated.

The last time I made cake I used a recipe that used almond flour - with good results. AS far as thickeners - there are some made just for cakes, but I've never tried them.
Frosting is pretty easy - cream cheese, splenda, splash of cream to thin as needed, vanilla. Whip the heck out of it with mixer. Add other flavors if needed. Or frost with flavored whipped cream - easy breezy. |

I make a sour cream coconut cake that is out of this world. The frosting could easily be converted to low carb.
The ingredients are 2-3 pkg frozen unsweetened coconut(thawed) 1 16 oz sour cream 1 3/4 sugar 8 oz whipped topping You could try 2-3 pkg frozen unsweetened coconut(thawed) 1 16 oz sour cream 1 3/4 c granulated splenda 8 oz sugar free whipped topping or whipped cream equivalent |
For a low-carb thickener use gelatin! :)
