Peppers!!
I just looked in my Atkins NDR book to check on peppers and if they're acceptable for Induction. They're listed as "Salad" veggies--so I could have 2-3 cups/day if I wanted to! That's so exciting!
One of my favorite new snacks is to bake slices of bell peppers (red, yellow and orange), tossed in a little olive oil and topped with a little kosher salt/chipolte seasoning. They're DELICIOUS!! As good, or better than the zucchini that I cook the same way :D So, on days I don't want a salad, or want a small salad and something else--I can have these for snacks, or scrambled into eggs...sorry, I'm just so psyched about loving veggies! I've never loved vegetables before Atkins--I eat more veggies now than I have in my entire life. I always chuckle a bit when someone tells me Atkins is unhealthy because you can't have fruit or veggies :D |
I love Bell Peppers too, glad you can eat them too! I love to slice a pepper in half and de-seed it and then I add a pouch of salmon to both halves, toss on a lil black pepper and I eat them open face sandwich style.... Delish!

Great Thread az! Ahhhhhhhh . . . my love for peppers knows no limits . . . loved green ones my whole life. Alas at age 40 - found I could no longer digest.:mad::(
I still can handle red and yellow - eat in a variety of ways - will try your salt idea - sounds good! Can be pricey so have to watch - I love them in olive oil with a sprinkle of parmesan when I eat them hot. |
i love peppers too and was just lamenting that i dont have any to put in my seafood quiche for dinner tonight!
