I think there are a lot of wonderful suggestions and comments here. I just wanted to add one more idea - and that is to log your food intake. A lot of people here (myself included) use Fitday.com. Besides keeping up with my calorie intake, and having a history to track trends, etc, it's been really helpful to me in that I am starting to just know the number of calories that are in the foods I eat regularly.

A mini success story to go with this is that I just got back from vacation last weekend. I actually lost half a pound over the previous week. Last year I gained 10 lbs on vacation! So even though I didn't have my beloved FitDay available, I was able to make educated guesses and pretty much maintain without trying that hard. I'm still thrilled!

There are so many sources on the internet for recipes. I use to buy frozen dinners. I did lose weight but did not keep it off because i never learned portion control. I now use a slow cooker, george forman grill, roaster. All of my appliances I got from thrift stores, brand new. I do my cooking on the weekend. Put it in the refrigerator and freezer for the week. This makes my life easier.

I sometimes take frozen meals to work to heat up for lunch. I just take along a serving or two of veggies and add them into the meal in the last minute of cooking (microwave).

Also, if I run out of time I just add a couple of servings of fresh or frozen veggies to a regular can of soup (preferably low sodium).

The best frozen meals, IMHO, are the lean cuisines and the skillet sensations ... you tend to get quite a few veggies in there depending on which ones you pick up.
