How am I losing weight?

I am an 18 yr. old female, 5'3 and I currently weigh 130.2 pounds. Yesterday morning I was 130.6 pounds. Anyway, I have noticed my weight has been decreasing rapidly (or so it seems??). I don't exactly remember when I started noticing I was losing weight, it was maybe toward the end of December 2016 and I was around 141 pounds. Within about a month i've lost 10 pounds. It seems like such a short time...and the reason being is that I eat horribly. I live on a farm, and 4-6 times a week i spend an hour doing barn work (cleaning horse stalls, lifting, pushing a heavy cart). I eat anywhere between 1,100-1,900 calories a day, i don't allow myself to exceed 2,000. Some days I eat healthier than others, which explains how it can vary. I usually eat 210 cal worth of cereal and almond milk for breakfast, a wheat bread peanut butter sandwich with an orange for lunch, and for dinner I pig out and eat pretty unhealthy. That is usually my daily routine as of right now. I cut out soda from my eating, with the occasional (maybe twice a month) fruit juice or cream soda at a restaurant. I also do not snack at all, and the rare times I do i snack on fruit. I also have a sugar problem....i constantly want to have dessert or something sweet after dinner, and even after indulging in some ice cream i still stay under 2k calories. Is this why I am losing weight? I am concerned i may become "skinny fat" or something doing this, so this week i have began doing cardio for 25 mins, aiming for 2-3 times a week so i don't wear myself out. Is this normal? Am i losing weight at a healthy pace? Am i going to continue to lose weight? My goal weight is 115-120, I am hoping to be there soon. I understand the quickest way would be eating healthy EVERY day, but I'm not impatient and I don't need to lose the weight fast. Slow is fine for me.

You're young enough that exercise can have a big impact on your weight. Barn work can be hard work, so that might be all the exercise you need. 2000 calories isn't that much if you're working hard. It gets harder as you get older and you have to be stricter on diet. Congrats on your weight loss!
