Default New Dinner Recipe I Thought I'd Share :)

I've had and loved spaghetti squash before but this takes it to a new level!

2 cups spaghetti squash
1 can tuna in water
2 tablespoons mayonnaise (low-fat or not, doesn't matter)
Pepper (I love pepper so I load it in there)
Dried Basil (just the spice, couple shakes)
Half an onion, diced
1 Tablespoon Grated Parmesan Cheese (I have this awesome low fat, low cal, low sugar one.)

I made that intending to eat the whole thing for dinner. Could only get through half! Was VERY tasty and very filling. Might add some lemon zest/juice/spice when I eat the leftovers tomorrow. For the whole thing it's a total of

358 calories
20.3 g carbs
34.8 g protein
12.2 g fat

AND, I was able to cut that in half cause I couldn't eat anymore. And I still have 300 cals left in my budget of 1600. Pretty darn good !

I get excited when I find new recipes, as you can see.

Thumbs up on this althoughhhh I used shredded zucchini noodles since I did not have spaghetti squash on hand. Still DELICIOUS! I ate a little over half, will be saving it tomorrow. Yum!

I made homemade wontons tonight that were pretty tasty and lean!

4 oz of lean ground beef (93/7 or 96/4)
2 tbs of weight watchers cream cheese
1/4 cup chopped red onion
1tbs of chopped garlic
9 wonton wrappers

Season and cook beef with onion until all done. Mix in cream cheese near the end. Lightly moisten wonton wrappers and stuff lightly with beef mixture. Fold over and bake in oven for 7-9 minutes at 375.

For a dipping sauce I mixed two tablespoons of lite miracle whip with 1/2 tablespoon-1 tablespoon sriracha pretty tasty!
