Last night was 2oz macaroni shells with 1/2 cup 0% greek yogurt, 1/8 cup jarred alfredo sauce and 1 tbsp parmesan then topped with 1 slice crumbled bacon. Oh yea, 1/2 cup green beans in there too.

Not sure about tonight.

This is a new one for me (I've not been in the habit of cooking "real" meals for a long time, and this is my first pass at really trying to do it "light".)

Beef stir fry with Asian oil and a bunch of veggies (green beans, zukes, snow peas, green/red peppers, onions)

Brown rice

Salad (or maybe skip the salad since there are already veggies and have a bunch of fresh fruit)

Your dinner sounds really good, Beth!!!

Had beef stroganoff again with piece of bread, mushrooms and a few egg noodles (already had tuna pasta with spinach for lunch so didn't want dinner to be too carbyyy.)

Tomorrow's dinner- Chicken and spinach pizzas using tortilla wraps as the crust, light alfredo sauce as the base and light cheese on top. Yum, can't wait.

Tonight is taco salad--one of our basic "go to" meals, since we all like it and it's quick and easy.

Saturday, I cooked 6 lbs of ground beef/taco meat in the crock pot, bagged it up, and froze it in single meal size bags. It makes it quick to put the meal together after work!

Hehe! You are definitely welcome anytime! Everyone else here who dines with me seems to be a bit picky and poke at it a few times before trying a bite. So funny to watch until they try a bite. "Oh, it's good! Wow, I'm surprised." Still surprised after 3 years of being the main cook. I jus have to say... don't use canned chicken for meatballs, bad idea. The flavor was good but texture was not. That's what I get for trying to use a shortcut. Raw ground chicken is best if you want that meatball consistency/texture as if you would for ground beef and pork, you know?
