What do you do with cilantro?

I just bought a bunch of cilantro for chili pepper sauce (which is super yummy) and have a lot left over. Any fun ideas for how to use it? Thanks!!

I use it in everything. It is good in an omelet. It is good if you sauted garlic, lime juice, chicken ( shrimp or scallope) in Olive oil. I use it in my tossed salad. Add it to salsa either homemade or jarred. It adds such great flavor.

It's great in Corn Salsa.

It's great with black beans, either cooked or in a salad.

Finely chopped cilantro is great on rice, cottage cheese, or plain yogurt, and adds lots of flavour :]

I'll chime in with everyone here... definitely all different kinds of salsa... gazpacho, cerviche, lots of different Mexican dishes... and also Thai dishes too... Yum!!!

I love it in chicken tacos: diced up chicken breast, chopped onion, cilantro and maybe some green salsa if you have it. Also agree with putting it in beans and eggs.
Not too long ago DH brought home for me a turkey sub from Subway and it had cilantro in it. It gave the sandwich a real nice flavor and I never would have thought of putting it on a sandwich.

I have a simple salad that I make often, based on an Indian "cachumbar" salad:

Dice up 1 English cucumber, 1/2 onion (white, red, or shallot), and 2 tomatoes. Add a generous amount of chopped cilantro, say 1 cup. Season with salt to taste (I am generous with salt), a little bit of cayenne if you like heat, and squeeze in the juice on one lime. Toss and let sit for 15 minutes or so.

I put some on tilapia tacos along with some onion, grated cheese, and salsa.

I also put it in a sauce that is used for dipping chicken, beef, pork, etc. The sauce contains soy sauce, a splash of vinegar, diced onions and tomatoes, and as much cilantro as I want (which I think is the best part).

Oh Tilapia tacos sound so good. I bought a bunch of frozen Tilapia.

I put Cilantro in omelets/scramble, salad, in a wrap, and whatever might need an extra kick.

My boyfriend and I buy bulk frozen tilapia since it's so easy to cook with. We usually bake it and add a side of salad for dinner but yesterday was the first time for the tacos and we pan seared it with some chili powder, garlic powder, and some lime juice splashed on. It came out awesome especially with the added cilantro, onions, and cheese.

I'm going to try putting cilantro in my omelet. I never thought to add it to breakfast.

Yum, love cilantro. Also, if you have way too much to use-- chop, distribute it in an ice cube tray w/a few drops of water, and freeze. Ready to use chopped cilantro next time you need it for a recipe!

I love it mixed with lettuce in my salad. Add some grilled chicken, corn, black beans and chopped mango then drizzle with lemon juice for an amazingly yummy salad.
