I am a huge fan of omelettes, so generally any leftovers get thrown into an omelette or crust free low fat quiche. For veggies, I also make a lot of soup with the leftovers (if there aren't any spices added). Or, I make some whole wheat pasta or brown rice, sautee the veggies together and voila, simple but tasty meal.

I think the stir-fry would be good. You can also make a tomato based soup with lots of veggies.
