Low Calorie Whole Wheat Blueberry Muffins
 
Alright, these aren't like, SUPER low calorie or anything, but I modified a whole wheat blueberry muffin recipe and made some pretty large muffins for less than 250 calories each!

I had to share this with you all because my family LOVED them (There are only two muffins left and I made them today!!). We all go nuts for blueberry muffins but haven't had them in a while because they are off the charts calorie-wise. Everyone missed them.

I stumbled across this recipe on tumblr and I tweaked it so that the muffins are less calories.

I used a big muffin tin and made six muffins. Thus, ~250 calories each (less really). If you use cupcake tins and make smaller ones (you'll wind up with 12) they will be ~125 calories each.

Whole Wheat Blueberry Muffins
1 large Egg
1/2 cup 2% Milk
1/2 cup Applesauce
1 1/2 cup Whole Wheat Flour
1/2 cup Honey
2 tsp Baking Powder
1/2 tsp Salt
1 cup Blueberries

Directions
Preheat oven to 400 degrees

Mix all ingredients together sans blueberries. Once everything is mixed, pour blueberries in and mix gently. Batter should be lumpy—use a spoon, not a mixer!

Bake for 25-30 minutes if you use larger muffin tins, less time if you use cupcake tins.

So yes, high in sugar and carbs but certainly a nice treat that isn't crazy high in calories :)

There's only one left now, haha! My 15 year old brother approved (another lover of blueberry muffins). I had one for breakfast and they are pretty filling!

I have to make more today...my mom is going out and buying blueberries just so I can make more :lol:

Oh yeah totally! My mom requested banana nut muffins so I plan on trying those out. I made a recipe where they come out to 262 calories each, so I'll have to try that out and see how it goes.

Second batch came out prettier, but the blueberries are all hiding :lol:. Two were already gobbled up because my Mom didn't get one and my Dad decided to have another. Calorie counting Dad liked that I handed over the nutritional information! :lol:

You can actually substitute oil for applesauce in a lot of baked goods. I've done it with cookies and cupcakes, so I thought it would work for muffins too. Nobody's ever noticed the difference.

When I made chocolate cake mix cookies with applesauce, my fiance swore they had a stronger chocolate flavor, but I couldn't taste any difference.

I thought the same thing until few years ago, I tried "Club Soda Cake" (idea was from diet soda cake but the artificial sugar in diet sodas aren't made for baking so I avoid that and use club soda instead.) Basically just 1 box of cake mix and 12 oz (1 1/2 cup) club soda. One or two eggs will bind it together better and less crumbly. Though, I gotta say the texture is more of muffin/brownie than a cake if you just use one egg. Anyway, that's when I found out you don't really need oil or butter for muffins, cupcakes and cake.
