Taco Cupcakes
 
These were originally Lasagna Cupcakes, but I changed the recipe to suit my tastes for tacos! :)

They are 160 calories, 2g of fat and 22g protien each. Makes 12.

24 wonton wrappers
1lb 96/4 extra lean ground beef
1/4 cup taco seasoning
1 cup pace picante salsa
1/4 cup mrs. renfro's green salsa
2 cups fat free shredded cheddar cheese

Brown ground beef, then follow instructions on taco seasoning packet.
Mix together picante and green salsa in a small bowl.

Lightly spray each 12 cup muffin tin with pam.
Layer one wonton wrapper in each cup.
Put about one tablespoon of salsa on top of each wrapper.
Sprinkle in a tablespoon of cheese, the top with about a tablespoon of meat.
Layer in another wonton wrapper, sauce, cheese, meat, then finish with more cheese.

Bake at 375 for 25 minutes, let cool about 5 minutes then just pop out and enjoy with a salad. :)

Wow, these sound so good. Too bad I have to limit gluten - I think the wonton wrappers are made with wheat flour. What a creative recipe!

you could try the rice paper wrappers...i believe most are gluten free.

I love Mexican food! Thanks for this!! I will modify it a bit by not using salsa (can't stand the stuff), and instead maybe use a little fat-free refried beans. Sounds great though!

I saw a very similar recipe for meatloaf cupcakes, but I can't find it right now... darn! The concept was the same - season the turkey and then add a bunch of finely chopped veggies to the mix - it suggested carrots, celery, onions, peppers, and tomatoes. I am going to try it next week but I want to add just a little bit of reduced fat cheese to the mix too :)
