I've been calorie counting since March 2011 and in the past 40 weeks (today!) I've lost 113.2 pounds. My calorie range is 1100-1400, but I mainly aim for 1200. There have been maybe a handful of days that I went a little over, but otherwise I've stuck to my plan like glue. I journal everything I eat, and that has helped a lot.
I don't eat meat, only a little fish every now and again. I stick to whole foods (oatmeal for breakfast almost every day, for example) and eat a very high volume of veggies. I also try to follow Dr. Fuhrman's (author of Eat to Live) pound of fresh vegetables and a pound of steamed vegetables each day.
