I like to feel full...
I woke up STARVING today and pulled out my go to "LARGE" low calorie breakfast. It made me realize you all prolly have the "I want to eat till I feel I'm going to pop but don't want to break the calorie bank" meals too. So here is my favorite big breakfast.
Oatmeal 1 package lower sugar apple cinnamon oatmeal prepared 110 Omlet 3 baby portabella mushrooms 13 1 whole egg 70 2 egg whites 32 1 slice of cooked ham 35 1 slice of fat free cheese or a light laughing cow wedge 35 slice and brown mushrooms and set aside beat egg and egg whites and cook in an omlet pan till set. Add mushrooms cheese and the ham and fold over. total breakfast 295 If I'm still hungry (only happened once or twice) I have some strawberries or cantaloupe too. |
That sounds delicious and really filling! I need to make omelets more often -- they fill me wayyyy up...I just never think of it in the morning because I'm so used to my routine breakfast.

I swear I'm ravenous today. Thankfully i'm home so I can cook. So lunch time came and I needed to eat.
So lunch = Faux shrimp Alfredo with sauted asparagus so here is the list 9 oz of 1 inch asparagus pieces (the edible parts of 1 bunch from the grocery store. Yay it's in season atm) 53 1 teaspoon GOOD quality extra virgin olive oil 40 Saute asparagus in olive oil in a medium non stick skillet untill starting to brown and tender 6 oz of shelled shrimp with tails removed 120 1 bag fettcinie style tofu shiritaki noodles 40 2 tbsp fat free sour cream 20 1 wedge sundried tomato basil light laughing cow cheese 35 drain rinse (and rinse and rinse and rinse) and dry (I use paper towell) your noodles saute the shrimp with salt and garlic powder in the same pan you cooked your asparagus in (there is still olive oil in it :) ) nuke noodles for 1 minute add to the pan with shrimp add sour creme and cheese and mix till cheese melts and you have a sauce. Salt and pepper to taste serve with asparagus and chow down. total calorie count 308 total cook time 20 minutes. (includes thaw time if the shrimp are frozen) |

It's easy stuff to cook and doesn't take long at all. Breakfast takes 10 minutes tops. Lunch took 5 minutes prep. I stuck the frozen shrimp in a bowl under cold running water for 5 minutes to thaw. While they were thawing I cleaned and cut up the asaragus. Put my pan on medium high heat to get hot. put the asparagus in the pan with the oil and tossed it to coat. while the asparagus is cooking I prep the noodles and shell, de-vein, and remove the tail on the shrimp.
If it's not quick and easy I won't do it. If it's not quick and easy it's not sustainable for me. And to be honest it taste way better than the crap I use to eat for a "quick meal" |
wow! that sounds delicious. Im not a huge fan of mushrooms, what can i substitute instead?

I just made some shirataki shrimp chow mein as it is ok for my diet & my man's low carb diet... we both feel too full & it was less than 300 calories a serving! For Asian style dishes no soy shirataki (no carbs, no calories, just fibre) are amazing!
