I am counting calories to lose weight..I am also insulin resistant, as a result I have cut out most of if not all refined carbs. I find that sometimes it is very hard for me to reach even 1200 cal. Today I had breakfast, lunch and snack and I am barely at 700 cal. For dinner I have a chicken burger planned which will come out to be 40 cals so that makes my day total 1100 I will probably add in an extra salad with it or something to compensate and get to 1200 but some days it is really hard, like yesterday I think I hit 1390 calories but the day before when I had carbs (left over pizza) I reached 3000 easily. I try to stay below 2500 cals daily preferably below 2000. My ideal calorie count is between 1600 and 2000.Am I just eating freakishly healthy since all my snacks are veggies/fruit and I always make sure i have a veggie with a meal? I don't drink anything except plain peppermint tea and water in the day so I am not missing cals anywhere.

Chicken burger at 40 cals doesn't sound right. Are you guesstimating the calories or do you actually measure and look up the calories for every little thing you eat?

From her post, I'm pretty sure OP meant 400 calories (because 700 + 400 = 100)

I also find that low-carb feels like a lot more food than higher carb WOE's. I use a low-carb exchange plan, so I can more easily stay in my target calorie range.





Fat servings are the easiest way to bring up the calories a bit. I'm not advocating bacon and butter every day (but once in a while is ok). But it's easy to ad healthy, yummy fats like a few nuts, a slice of avocado, a crizzle of olive oil...

I've had this issue, too. I counted every single thing I ate the other day and even after dinner I was only at 940 cals. I want to be somewhere around 1600-1800 per day, but I never really know if I'm meeting it or not.

Good to know I'm not the only one who seems to be undereating a bit.

Agree with kaplods that good sources of helathy fats are important. Also protein heavy snacks like string cheese or deli meats can be useful!

I have been adding some nuts to bring up my points - I'm IR too and boy do I feel better after getting rid of the processed carbs. :)

LOL yea I meant 400 not 40. I ended up adding some avocado to the sandwich to add some calories. I LOVE nuts. Glad I am not alone in this. I have been like WHOA. I didn't want to end the day at like 1200 cals when I had 1300 yest..I would rather hit up in the 1500's or above. Thanks all. I add nuts and things sometimes but I don't keep those things around much. So i headed to the store. Maybe I will go back tomorrow and get some cashews for cashew chicken XD

Enjoy it while it lasts :) Just kidding, yes even in maintenance I still have trouble finding enough cals, but then others days it's a struggle to stay under, just depends on what I'm in the mood for. You've gotten good advice so far, and adding avocado what a great choice and so are nuts. Other ways to increase cals are always adding more veggies, this is pretty much my go to way to add cals because I can really load up and I LOVE volume.
