I am sitting here with no plan for dinner and no clue what to make.

Soooo what's for dinner tonight? Got an approx calorie count for that?

Finally found this recipe online - don't have the cookbook on me. I love this recipe; it's pretty quick and easy, very filling, and surprisingly low-cal!

Turkey and Black Bean Chili (Weight Watchers)
(serves 4)

2 teaspoons extra-virgin olive oil
1 onion, chopped
1 green bell pepper, seeded and chopped
4 garlic cloves, minced
3/4 pound ground skinless turkey
1 (15 ounce) can black beans, rinsed and drained
1 (14 1/2 ounce) can diced tomatoes
1 tablespoon chili powder
2 teaspoons ground cumin
1 teaspoon dried oregano
1/2 teaspoon salt
1/2 cup shredded fat-free sharp cheddar cheese
1/4 cup fat-free sour cream
1/4 cup sliced scallions

Heat the oil in a large nonstick saucepan over medium-high heat. Add the onion, bell pepper, and garlic; cook, stirring occasionally, until softened, about 5 minutes. Add the turkey and cook, breaking it apart with a wooden spoon, until no longer pink, about 3 minutes. Stir in the beans, tomaties, chili powder, cumin, oregano and salt; bring to a boil. Reduce the heat and simmer, covered, until the vegetables are very tender, about 30 minutes. Serve with the cheese, sour cream and scallions.

Serving size: 1 cup chili, with 2 tablespoons chees, 1 tablespoon sour cream and 1 tablespoon scallions.
Serves 4

Rather boring for me tonight..I just had a nice turkey sub sandwich. No mayo and no cheese, but loads of veggies and mustard. Whole sub about 375 calories. I am not a carb controller at all, so I can do that bread thing. hehe

baked chicken in salsa and roasted butternut squash... weird, but i had to roast the squash once and for all and i need protein! :)

Same thing as yesterday--tuna salad w/ cucumbers, tomatoes, and sprouts + 1/2 bag of reduced fat potato chips. This is like my favorite meal ever. Tuna is so good.

Dinner tonight at my house is pumpkin and black bean soup with bits of chicken breast in it and some spinach as well. A small cornbread muffin if I am super hungry; otherwise, i might just have the soup. it's one of my favorites and something i made into a skinny recipe. The original version has a lot of fat and calories!

Do you use canned pumpkin or fresh cubes? I'm always excited to try soup recipes with pumpkin, but a lot of them seem filled with cream or come out bland. I'm curious about a combo with black beans and chicken - what kind of spices do you add?

We had Rick Bayliss' Pork Tenderloing a la Mexicana tonight. It was really good! Made a nice change from chicken and a small amount filled us up with plenty of leftovers. We put it on corn tortillas not rice

Oh man these posts make me hungry...tonight I have no idea what I'm eating yet as my boyfriend's mum is back from her holiday which means I'm at the mercy of whatever she decides to cook - luckily it's all pretty healthy 90% of the time.

Last night I had chicken tortellini with pesto and a small salad.

After an overindulging lunch (think foccacia bread with garlic mayo, chicken and lots of cheese, fro yo with granola! EEEK!) I stuck with a huge salad of iceberg lettuce, some red peppers, onion, red wine vinegar and 3 oz of Trader Joe's frozen chicken strips. That with a side of asparagus and an apple for under 275 calories! I hate having to make less indulging dinners because of big lunches! Still very good dinner!

mandalinn You seriously always seem to be having the tastiest meals. Yum. I adapted the turkey meatloaves recipe you posted probably ages ago and now it's my go to if I can find ground turkey (which isn't that easy in New Zealand, but it happens). Your sauteed cabbage with onions and pears sounds curiously tasty.


I really want steak for dinner tonight. I don't know if it will happen. I think I'm craving red meat for the iron content or something - either that or I just need meat. Haven't had it in a fair while now.

Hehe - thanks! I can't eat healthy if it doesn't taste good. Just does not work for me. So I made up a lot of healthy things that I genuinely love, and I love when people try them out!

The cabbage recipe I originally made with a granny smith apple, and I liked that a bit more - the sweet/tart apple and crisper texture was a better fit for the cabbage. I throw in a bit of fresh grated nutmeg, a pinch of ground ginger, and some salt and pepper. I saute the apple and onion until they start to get golden, add in the spices, then add the cabbage and continue stirring while it wilts. Then, when it is almost done, I add a splash of apple cider vinegar and let that cook out. The cabbage stays a little crisp, and the sweetness of the apple really balances the bite from the vinegar and the cabbage.

Tomorrow's dinner - roasted pumpkin soup with a little cinnamon, nutmeg, and a little sauteed onion - puree that up with a little chicken broth...Served with a grilled cheese and pastrami sandwich...lower-cal sourdough bread, a few thin slices of pastrami, some goat-milk gouda, dijon, and arugula.

Trader Joe's Mahi burger on toast with pineapple salsa, onion and lettuce, asparagus, broccoli, 80 cal instant mashed potatos and a big ol salad! 445 calories!

Tonight is salmon w/ a balsamic honey mustard glaze and topped with scallions, a baked sweet potato, and steamed california blend vegetables for 427 calories.


I wish lead wasn't a thing, because I could eat fish at every meal.

Tonight it's chili rubbed tilapia with spicy sweet potato fries and I'm hoping I still have something green in the fridge to eat with it (time for a store run soon).

I made a wonderful chicken pasta salad with baked chicken, whole-wheat pasta, and a ton of fresh veggies (cucumber, onion, yellow peppers, carrot, celery, and sundried tomatoes). I used nonfat plain yogurt, a tad light mayo, and Dijon mustard as well as tons of fresh black pepper and a dash of dill-weed.

I am so boring...also known as lazy. I just had a turkey dinner from Lean Cousine. I absolutely love this meal. It comes with turkey, stuffing, mashed potatoes and green beens with a few cranberries scattered in. I had a low-sodium V8 to go along with it.

I know frozen meals are not the healthiest, but at this stage in my weight loss they are getting me through and they're working.

Last night I got my steak (yay) along with boiled potatoes, balsamic mushrooms and a mix of edamame, green and yellow beans.

Tonight is honey soy pork eye fillet, rice and salad I think.
