Easy quick lunch ideas
Im starting to get sick of lean cusines and want to lower my sodium intake. Does anyone have any quick and easy also cheap lunch ideas. I looked at the thread for under 400 cals but want more ideas. I know sand and salads. But what else? Ideas please :) :D

I love couscous for lunch - it's tasty, filling, and extremely easy to make in the mornings. I measure out 50g of it (worth 188 calories) into whatever container I am taking to work, bung some boiling water on top and put the lid on the container. Sometimes I throw some frozen peas in there too at the same time. It "cooks" whilst I eat my cereal and drink my coffee. I then just add whatever I fancy to the couscous to liven it up, depending on what I have in the fridge! You can add anything, like green or red pesto, a little extra virgin olive oil, tuna, prawns, leftover chicken, olives, sun dried tomatoes, feta cheese, arugula, anchovies, sweetcorn, artichoke hearts, cracked black pepper and sea salt... the list is endless! I usually eat it at room temperature, but you could easily warm it up if you prefer. It's so tasty and filling and incredibly quick to make, and it looks fresher and nicer than the pre-made salads you see in delicatessens that cost about ten times the price!

If you have a way to keep things cool on the way to work and at work:
tuna with mayo, lettuce and low starch veggies salmon " " avocado, lettuce and tomato with roasted chicken, or turkey, or ham, etc. a few cherries or some raspberries for dessert If you've got a way to keep it cool and then heat it: Minute steak with sliced tomatoes and cottage cheese on the side. |
One of my favorites is black bean tostadas:
1/2 cup goya black beans 90 cal 2 corn tortillas, you can make em crispy in the microwave 100-130 cal depending on brand. lettuce tomato, onion, salsa 40 cal max 1/2 cup brown minute rice 115 cal low fat sour cream 45 cal/serving I do not put cheese on, sometimes I put some avocado on it for another 50 yummy calories, and Jalepenos if you like a kick. Basically, a big yummy healthy salad. |
One of my favourite lunches is...4 cups of baby spinach leaves, a tin of chick peas, a tin of beetroot peices, 1/2 red onion, 80 grams of feta - mix all together and add a teaspoon of balsamic vineger and 1 teaspoon of olive oil...it makes 2 serves and is 400 calories each and is a huge and filling salad and is delishus!

Have you tried the Amys brand of organic vegetarian frozen meals? I like the spinach feta pockets, there are a lot of other meals. I think they are sold at Vons.
