Cooking cod
 
So fish is something my husband and I have problems integrating into our diet, other than in frozen, breaded stick form. :o

I've tried to cook it a million times, and it just ends up mushy and "fishy."

But we're trying again tomorrow night. I've got some cod (frozen, but just fish - no breading, and no pre-cooking). My husband really wants it breaded, but has no problem with it baked (he'd prefer fried, but I say no! :devil: )

So....what do I do?! How do I make this good enough to make it something we want to have again? Help!

I'm not that great with fish either, but my first thought is to use Panko bread crumbs and then bake it. Panko crumbs are super crispy. I did some oven baked chicken tenders with it last week.

Wish I could help, but I have never breaded fish, just baked or cooked in a non-stick skillet. If you find a method that works, please share it! I'd love to try and fix fish breaded, but not fried.

I like to dip thin fillets of fish in egg and then ground almonds for a bit of a crust. Sesame seeds are great too. Another nice very light crisping is to dip fish in corn starch instead of flour or breadcrumbs. Cod is lovely when steamed and covered in a nice sauce, either a white sauce with lots of fresh chopped parsley or a mustard sauce. These are Danish ways of eating cod, not sure what is done in America. I also like cold cooked fish with curry mayonnaise for a lunch.

I think though, that some fish lend themselves better to steaming, others to being breaded or pan fried. To keep fish in your diet, do eat what you like. Home breading is better than commercially prepared (you can create very light breading). Check the ingredients to be sure you want to eat the additives.
